Tart Cherry Baked Brie Bites

Ingredients
- 1 cup dried Montmorency tart cherries
- 1/2 cup red wine
- 1/4 cup balsamic vinegar
- 1 1/4 cup water
- 1 1/2 tbsp cornstarch, mixed with water
- honey, salt, pepper to taste
- 2 sheets puff pastry dough, cut into 3-inch squares
- 18 mini wheels of Brie cheese
- 1 egg, beaten
Directions
For the sauce:
- pour boiling water over the cherries and let them plump up for 30 mins, drain water
- simmer red wine and balsamic until reduced, about 5 mins
- add tart cherries and cornstarch dissolved in water, simmer another 5 mins
- season to taste with salt, pepper and honey
- let cool before serving
For the brie bites:
- wrap cheese wheels in 3 inch sections of pastry dough, pinching at the top to seal
- brush with egg
- bake at 400° for 20 minutes
