Tart Cherry Ginger Muesli Yogurt Bowls

Ingredients
- For the muesli:
- 3/4 cup rolled oats
- 1/2 cup dried Montmorency tart cherries
- 1/4 cup sliced almonds
- 2 tablespoons cacao nibs
- 1 tablespoon chopped candied ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon salt
- For the tart cherry sauce:
- 1/2 cup frozen Montmorency tart cherries (thawed)
- 1 tablespoon lemon juice
- 1/2 tablespoon cornstarch or tapioca starch
- 1 tablespoon Montmorency tart cherry juice
Directions
For the muesli:
Combine all ingredients in a bowl and toss together. Serve over plain yogurt with tart cherry sauce recipe below.
For the tart cherry sauce:
Add the tart cherries and any accumulated juices from thawing to a small sauce pot with the lemon juice. Bring to a boil then simmer over medium-low heat for about 5-7 minutes until reduced and thickened.
Mix the cornstarch/tapioca starch in the tart cherry juice in a small bowl. Once dissolved, add it to the sauce pot with the cherries and stir until thickened. Remove from heat and serve with muesli in a yogurt bowl.
